Well it's Friday.

And as a Roman Catholic.
I will have my traditional fish meal. Not a chippy tea though, although I do indulge from time to time. I love a chippy tea.

This evening will be. Home made roasted, Mediterranean veg in a home made tomato, herb and garlic sauce, which will be served on a bed of pumpkin and sunflower seeds with Quinona and Basmati rice. With a small fillet of Salmon plonked on top. Followed by a small dish of grapes, Greek yogurt and some sugar free jelly. Providing I have room for the sweet.

Tell me how you make the sauce and bed. I think it was ena gave me the recipe for the lime cod, please. His was good.
I love fish, have lots of it.

I use aubergines, courgettes, cherry tomatoes, sweet peppers, red onions and sometimes mushrooms. Not written in stone though, if you don't like some of the ingredients just change them for something else. Slice them, put baking parchment on a tray and the the veg, drizzle with olive oil and stick them in the oven to roast.
Sauce, very simple. A tin of chopped tomatoes, season with crushed garlic and mixed dried herbs, black pepper, salt if you need too. Slow simmer to reduced down, but not too much. Stir in the roasted veggies.
I poach the salmon in milk but the cooking method for the salmon is whatever you preference is.
The rice mix come ready made, from Aldi but you can use any rice, I just like that particular one.

I've been thwarted.

We've had Hake and mixed veg. I had a pint of Guinness and the Mrs had water.

All sounds good to me... Enjoy people.... Back in my van fot weekend... Today's delight... Fish N mushy peys... Three shives of the white bread.. Marvellous.

Do you remember the fish at dinner times on Friday white fish in red sauce but you maybe to young to remember it was ukkkkkkkkkkk

Was the sauce a tomato sauce.

I wonder if anyone pushed the boat out last evening and had Spam burnt egg and chips.

Burnt egg....Was it a boiled egg?
