Tasty temptations in Wigan Market as new stall opens
Dominick serves up pancake treats

You can just call in for a brew if you want to, but there’s much more on offer at Dominick’s new stall at the heart of Wigan’s indoor market.

With experience as a top chef in smart establishments in the Lake District, as well as in his native Poland, the market’s newest stallholder is full of enthusiasm for his new clientele.

“I love Wigan and its market!” says Krakow born Dominick Gondko. He moved here four years ago to develop his culinary skills. Before setting up ‘The Golden Pancake’, he worked at a hotel in Windermere. “Everyone in Wigan is very friendly and I want to give them a great choice of food.”

The market is home to a wide selection of stores; jewellery, phones, bags and clothing, plus a choice of eateries and speciality food suppliers.

Dominick’s forte is pancakes – savoury and sweet, and all prepared with the freshest local ingredients, often from the market itself. He’s a big supporter of Wigan Council’s Buy Local campaign by purchasing his ingredients from nearby stalls: “They are quality ingredients at a reasonable price and you know exactly where everything is from,” Dominick says. “We support each other here on the market by promoting our stalls and buying each other’s produce.”

Cabinet champion for the economy Cllr David Molyneux adds: “It’s another success for Wigan town centre and our lively market – and just that little bit different as well.”

Dominick hopes to expand his business, to give an even wider choice of menu items and perhaps even take on staff.

Amongst the sweet treats he’s got on offer, and more familiar bacon and sausages, Dominick is keen to offer new things. Today it was beetroot soup. And it was selling quite well. He says: “It’s interesting to see people’s reaction to the soup because it is new and generally people like to stick to what they know”.
