On Saturday Kitchen Best Bites the other week Glynn Purnell was making Gressingham roast duck with licorice charcoal and tamarind sauce, James Martin explained that these are a cross between Mallard duck and what I misheard was Mandarin duck, however he actually said Mallard duck crossed with Pekin duck. a link is below if you want to try it .

Shocked Cyril, the only Mandarin Iíd eat is the little orange! Very Happy

Brilliant! Thanks, Mick, Iíve only ever seen Mandarin Ducks at Martin Mere.
Hope they enjoy their visit to Ince. Smile

If they stick around for a few weeks they can join in the next Wigan Canal History Walk.
Saturday 1st June, starting at 10am from Wigan Dry Dock & wandering all the way up to Top Lock (Link)

Jo Anne I don't like duck either as I can taste pond weed and other pond life, you could try this recipe for Mandarin Orange Cake, looks to be just the job for a nice Sunday afternoon treat, though I'd use an orange extract in the sponge rather than vanilla, may have a go at it tomorrow.
