Ah spare rib is another feast but not like the fancy ribs you get today, A bloke used to sell a 'sheet of ribs' in the pub for 60 pence, He used to travel south were ribs got clod in't bin and deemed not fit for human consumption, He brought a transit van full up the Wigan every Friday and sold them in the pubs,
My recipe for them was, just boil them till the meat left the bone, no fancy spices or sauces and when the chinese found out about them, they bought them up and sold two with barbacue sauce for £2.50 and folks from ' up the Hill' paid it and the 60p sheet of ribs were gone forever,
